Crosta d’oro is a cave-aged pecorino made according to the oldest Tuscan traditions. During aging it is treated with grape seed oil and at the end of its maturation, which as a minimum lasts 150 days, but can reach up to 10 months. It has a bowl shape, typical of Tuscan pecorino, a hard, almost smooth rind, but with die-cut marks in the faces, and the characteristic light golden-brownish color, with some darker spots in the hollows. Sheep’s animal scents, delicate and vegetal, hints of hay and dried fruit. Balanced flavor, slightly spicy, salty but sweet, very crumbly in the mouth and has excellent persistence.
