Harvest: Hand-picked, selecting the best grapes from the Merlot, Cabernet Franc and Cabernet Sauvignon grape varieties from the third week of August until mid-September
Vinification: Alcoholic fermentation in concrete at a controlled temperature of 22°C for 23 days, followed by 4 weeks of maceration. Malolactic fermentation in French oak barriques for 4 weeks.
Maturation: 70% new barriques for about 24 months. Pre-bottling aging in concrete for 3 months. Aging in bottle for another 8 months

Tasting Notes: Intense ruby red color. On the nose notes of currant, black cherry and violet are enriched by pleasant hints of vanilla, tobacco and cocoa. On the palate a wine of great structure and body where the softness and elegance of the merlot is combined with the acidity and structure of the cabernets.
Pairing: Goes well with structured dishes, grilled or roasted red meats, stewed game, savory and slightly spicy cheeses. After several years of bottle aging it is perfect paired with a cigar or dark chocolate.

Vallepicciola is situated in Pievasciata, on the western slope of Castelnuovo Berardenga in the UGA Vagliagli region of Chianti Classico. In 1999, the Bolfo family purchased and restored an abandoned convent that had been unused for decades, transforming it into the 5-star hotel “Le Fontanelle” and acquiring nearby vineyards. Vallepicciola’s symbol is King Franco Berardo, a member of the Berardenga family, who, in the 7th century, was sent by his father to oversee the family’s Chianti estates. There, he fell in love with the land and lived much of his life, establishing a noble lineage that endured for centuries. The estate spans 265 hectares, including 105 hectares of vineyards located at elevations of 380–450 meters above sea level. The soils vary in composition, including clay, blue and calcareous marl, tuff, sandstone, and sand. This diversity gives Vallepicciola wines their distinctive and elegant character.
