Aging: 12 months in Slavonian oak casks between 75 and 150 hl, followed by refinement in bottle.
Alcoholic strength: 14.5%

Organoleptic characteristics:
Colour: deep ruby red with violet hues.
Bouquet: ample and complex with notes of cherry and sour cherry followed by a woody and spicy fragrance.
Flavor: elegant and soft with pleasant ripe tannins. The aftertaste is fruity, long, and persistent.

Leak Orzotto is prepared with barley combined with selected and dried vegetables. Easy to prepare: just open the bag and add a liter of cold salted water. It is boiled for 35 minutes, stir frequently during cooking, and an excellent first course is ready. Perfect seasoning is with a knob of butter and about 80 g of gorgonzola, or another blue cheese. As a wine pairing, choose an Alsace Gewurztraminer to accompany this recipe, or another Gewurztraminer not very young and quite complex. Simple and original!

Vinification: The harvest is carried out manually. The fermentation takes palace in steel tanks. Fermentation occurs at a controlled temperature no higher than 30° C.
Ageing: After completing the malolactic fermentation, the wine continues its ageing in steel for several months, then bottled, and continues further with refinement in the bottle.
Organoleptic characteristics: intense ruby red colour, hints of red and black fruit: cherry, blackberry, raspberry, red currant, notes of spices and black pepper. Fantastic freshness on the palate, complex and elegant with harmonious tannins, of great personality and pleasantness.
Pairings: grilled meats and traditional Tuscan pasta dishes.
