Langguth Winery recently started using a three-tier classification system for its wines: Basic, Premium, and Top. To further highlight the steep- and steepest slope viticulture, they assigned each tier a slope incline degree of 12°, 36 °, and 50°. These represent the average inclines of the respecting vineyards. 

Langghut's 50° Top Premium wines are the pinnacle of their craft. These wines are produced from extremely low yields of carefully selected grapes grown on the winery's smallest and steepest slopes. The winemaker's work is meticulous, with spontaneous fermentation and prolonged ageing time, including periodic lees stirring, giving the wines a smoothness and perfectly integrated acidity. Year after year, Langguth produces limited-batch Rieslings with exceptional character and great ageing potential.

Drying: “Appassimento” (passerillage) on the vine. Harvesting in different passages bringing home each time the bunches at the right point of dehydration. 
Pressing: soft pressing after a rigorous grape selection.
Fermentation: slow fermentation at a controlled temperature of 16°C in thermo-conditioned stainless steel until the desired amount of alcohol is reached. The alcoholic fermentation is then stopped by cooling and subsequent filtration of the wine. 
Ageing: one year in new barriques and 6 months in bottle.
