Girotondo is an aged sheep cheese from a cylindrical shape, with a slightly convex heel of about 8 cm in height and almost flat faces of 8-9 cm on the side. The rind is hard straw-colored with darker and irregular spots that vary depending on the seasoning with the possible presence of mold. Compact but crumbly paste. Animal notes (clean sheepskin) and stable, of cooked butter and vegetables such as toasted dried fruit, a hint of undergrowth, and delicately sweet taste.
