Piparello is a sheep cheese aged in caves at natural temperature and humidity and always in a vertical position. It has a cylindrical shape with a hard and slightly wrinkled rind, light brown in color with dark shades. The paste is ivory white in color. The vegetable scent of grass and walnut, in general of dried fruit, and notes of musk. The balanced flavor of medium intensity, salty and sweet, crumbly and has good persistence.
